Kesar Essence Rasmalai

Rasmalai is one of India’s most beloved desserts, known for its soft, spongy chenna patties soaked in sweet, creamy milk. Infusing it with James Kesar essence adds a rich aroma and a golden touch without the need for real saffron strands! 


Ingredients:

For Rasmalai patties:

  • 1 litre full cream milk

  • 2–3 tbsp lemon juice or vinegar (diluted with 2 tbsp water)

  • 1 cup sugar

  • 4 cups water


For Kesar Milk Syrup:

  • 1 litre full cream milk

  • ½ cup sugar (adjust to taste)

  • ½ tsp James Kesar Essence

  • ¼ tsp cardamom powder

  • Chopped pistachios & almonds (for garnish)


Instructions:


1. Preparing the Chenna (Paneer):

a. First, we will boil some milk in a heavy-bottomed pan. Once it comes to a boil, we will reduce the flame.

b. Now, we will add some diluted lemon juice/vinegar gradually while continuously stirring the mixture until the milk curdles.

c. After that, we will strain the mixture using a muslin cloth, rinse it with cold water and squeeze out any excess water.

d. Next, we knead the chenna for 8–10 minutes until the dough is smooth and free from lumps. We will form small, flat discs from the dough.


2. Cooking the patties:

a. We will use a wide pan, add sugar and water and bring the mixture to a boil.

b. Next, add the patties gently and cover. Cook on medium heat for 12–15 minutes until they turn double in size.

c. After that, turn off the heat and let them cool in the syrup.


3. Making the Kesar Milk:

a. Now we will boil a litre of milk and simmer it until it is slightly thickened.

b. Next, add sugar, cardamom powder and James Kesar essence (add the essence after turning off the heat to retain maximum aroma). Stir the mixture well.


4. Putting it together:

a. We will gently squeeze the excess syrup from patties and place them in the saffron milk.

b. Then, sprinkle some chopped pistachios and almonds over the top. Chill for at least two hours before serving.
