Elaichi Kheer- Rich, Creamy and Aromatic

Whether it is a festive celebration or a family dinner, Kheer or Rice Pudding brings a sense of warmth and nostalgia to everyone. There’s something timeless about a bowl of creamy Kheer. Since this dish is made to make a day special, countless memories play in our minds when we come across the first whiff of aroma as the rice simmers. Also, Kheer reminds us of the love of the person who prepared it, as a token for us.


Ingredients:

  • Full-fat milk – 1 litre

  • Basmati rice – ¼ cup (soaked for 20 mins)

  • Sugar – ¼ to ⅓ cup (adjust to taste)

  • James Allachi (cardamom) essence – 2–3 drops

  • Cashews, almonds, raisins – 2 tbsp (optional)

  • Ghee – 1 tsp (for roasting dry fruits)


Instructions:

  1. We will start off by boiling the milk. Heat the milk in a heavy-bottomed pan. When it starts to boil, put it on simmer.

  2. Now, drain the soaked rice and add it to the milk. Keep cooking on low flame while stirring frequently. Let it simmer until rice is soft and milk thickens. It should take around 20–25 mins.

  3. Next, stir in the sugar and cook for another 5 minutes till it is dissolved completely.

  4. After that we will turn off the flame and add 2–3 drops of James Allachi Essence and mix well.

  5. In a separate pan, we will fry some dry fruits in ghee and add them to the kheer.

  6. Your delicious elaichi Kheer is ready! You can serve it hot or chilled — both taste equally amazing.
