Orange Essence Infused Quinoa Salad
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 teaspoon James orange essence
- 1/4 cup olive oil
- 1 tablespoon honey or maple syrup
- 1/4 teaspoon salt
- 1/2 cup diced cucumber
- 1/2 cup diced bell pepper (any color)
- 1/4 cup red onion, finely chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley or cilantro, chopped
- Optional: feta cheese or avocado for topping

Instructions:
1. Cook Quinoa: In a saucepan, combine quinoa and water (or broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed. Let it cool.
2. Make the Dressing: In a small bowl, whisk together olive oil, James orange essence, honey (or maple syrup), and salt.
3. Combine Salad Ingredients: In a large bowl, combine the cooked quinoa, cucumber, bell pepper, red onion, cherry tomatoes, and parsley (or cilantro).
4. Dress the Salad: Pour the dressing over the salad and toss to combine, ensuring everything is evenly coated.
5. Serve: Garnish with feta cheese or avocado if desired. Enjoy chilled or at room temperature.
