Pineapple Mousse

Pineapple Mousse is tropical, light, airy and looks gorgeous in glasses. It’s airy, creamy, and has just the right hint of tropical tang to lift your mood instantly. Since fresh pineapples can sometimes turn out sour, our pineapple essence guarantees balance and consistency every time.
Ingredients (4 servings)
1 cup heavy cream (chilled)
½ cup condensed milk (sweetened)
2 tsp powdered sugar (optional, adjust to taste)
1 tbsp James Pineapple Essence
1 tsp gelatin or agar-agar (for setting, optional)
2 tbsp warm water (to dissolve gelatin/agar)
Whipped cream + mint leaves + pineapple chunks (for garnish)
Instructions
To start off, we will dissolve the gelatin in warm water and let it cool slightly.
Next, in a chilled bowl, we will whip the heavy cream until soft peaks start to form.
After that we will gently add in the condensed milk and powdered sugar while mixing them in a folding method.
Then, we will add the dissolved gelatin/agar and 1 tsp James Pineapple Essence. Make sure you mix it gently so that it stays airy.
Next, using a spoon, pour the mousse into serving glasses and smoothen the top.
Then, refrigerate them for 4–6 hours until they are set.
This mousse is light, velvety and has that perfect consistency. Enjoy!
