Orange Butter Cookies with Creamy Icing

Crunchy baked orange cookie with a soft, creamy dollop of orange icing on top. These cookies melt in your mouth with the juicy aroma of ripe oranges. Ideal for tea-time treats, gifting, or enjoying them when you crave!

Ingredients
For the Cookies:
1/2 cup (115g) unsalted butter, softened
3/4 cup (150g) sugar
1 egg
1/2 tsp James Oil of Orange Essence
1and 1/2 cups (190g) all-purpose flour
1/2 tsp baking powder
A pinch of salt
For the Icing:
2 tbsp butter, softened
3/4 cup powdered sugar
1/4 tsp orange essence
1–2 tsp milk (just enough to make sure it spreads evenly over the cookies)
Instructions
We will begin by preheating the oven. Preheat your oven to 175°C (350°F). Then, line a baking tray with parchment paper.
Next we are going to make the cooking dough. In a bowl, whip together the butter and sugar until it is light and fluffy. Then add the egg and half a teaspoon of James Oil of Orange No.1 essence. Beat the mixture well. After that, stir in the flour, baking powder and salt to form a soft dough. Then, roll the dough into small balls and gently flatten them on the tray.
Now, we will bake them for 10–12 minutes until the edges turn lightly golden. We will let them cool completely before icing.
While the cookies are getting cool, we can prepare the icing. In a bowl, beat softened butter with powdered sugar.
Add your half a teaspoon of orange essence to it and just enough milk to create a smooth, spreadable icing.
Now, all that is left is to ice the cookies. Spread or pipe a layer of icing over each cooled cookie. Then allow it to set for 15–20 minutes (or you can put them in a refrigerator to chill them briefly).
Serve. Your cookies would go well along with a cup of your favourite hot coffee or tea or even as it is!
These cookies are simple to make and you don’t need any zest or juice. Additionally you can store them easily in an airtight container!
