Kesar Kulfi Recipe – Creamy Indian Saffron Ice Cream (Easy & Authentic)

The original Indian frozen delicacy- the Kulfi! Kulfis are creamier, denser and more intense than ice creams, since they have no air bubbles. Here is the full recipe of your James Kesar Essence Kulfi-
Ingredients
Full-fat milk – 1 liter
Condensed milk – ½ cup
Sugar – 3–4 tbsp (adjust to taste)
Pistachios (chopped) – 2–3 tbsp
James Kesar Essence – ½ tsp (or 2–3 drops, as strong as desired)
Instructions:
1. Boil the milk in a heavy bottomed pan. Boiling in a heavy bottomed pan is necessary since we are going to condense the milk on heat. Stir and reduce to half the quantity on medium heat. Keep scraping the sides and mixing.
2. Once thick, add condensed milk and sugar. Stir well until they are completely dissolved.
3. Next, add chopped pistachios and James Kesar Essence. Mix well.
5. Let the mixture cool down slightly, then pour it into kulfi molds or small cups.
6. Now, cover with foil and insert ice cream sticks or Kulfi sticks to stay true to your roots! They are round and usually made out of bamboo. Freeze them for 6–8 hours or overnight.
7. To serve, dip the mold briefly in warm water and gently pull out the Kulfi. You can enjoy them as it is or serve them on a platter and scoop them with a spoon. Sprinkle some pistachios over the top for extra crunch!
