Sondesh: The Authentic Taste of Bengal!

The authentic Bengali Sondesh has a rich, creamy scent of milk which is not too sweet. You can taste the subtle notes of milk with each bite as its preparation process does not involve any heating! Adding a hint of our James Milk Super essence will ensure that your Sondesh smells and tastes authentic, to the core.


 


Ingredients:

 

For the Sondesh:

1 cup fresh paneer 

3–4 tablespoons powdered sugar (adjust to taste)  

1 teaspoon James Milk Super essence


For the garnish:  

Chopped pistachios or almonds.


Instructions:

Roll up your sleeves and wrap your apron! Let’s get started…


1. Preparing the Paneer:

    If you don't have fresh paneer, boil 1 liter of milk.

    Once it boils, add lemon juice or vinegar slowly until it curdles.

    Strain through a muslin cloth and squeeze out excess water.

    Hang it with the same cloth for 30 minutes to remove all whey. Make sure it stays soft and moist—not too dry


2. Kneading the Paneer:

    Place the fresh paneer on a clean surface.

    Knead with your palms for 5–7 minutes until it becomes smooth and creamy.


3. Mixing other Ingredients:

    Add powdered sugar and James Milk Super to the kneaded paneer.

    Mix gently.


4. Shaping the Sondesh:

    Divide the dough into small portions, flatten it and shape it into cubes or discs.

    You can also use molds if you are in the mood for fancy shapes.


5. Garnishing and Chilling:

    Garnish with chopped pistachios or almonds.

    Chill in the fridge for 30 minutes before serving.



If you want to give a slight firmness to your sondesh, you can lightly warm the mixture on low flame for 2–3 minutes before shaping. 


Prepared with essentially two to three ingredients, it is hard to believe that something so simple, could be so distinguishable in taste. Give this classic a try and experience what we are trying to put into words!
