Pineapple Halwa- Fruity, Tropical twist for your halwa!

Add a tropical twist to your regular breakfast halwa with this Pineapple Halwa recipe! It is delicious, fruity and melts in your mouth with a sweet, bursting pineapple refreshment!
Ingredients:
½ cup semolina (sooji/rava)
2 tbsp ghee (clarified butter)
1½ cups water
½ cup sugar (adjust to taste)
¼ tsp James Pineapple Essence
2–3 tbsp chopped pineapple or cherry
A few cashews and raisins
Instructions:
To start off, we will slightly roast the sooji. Heat 1 tablespoon of ghee in a pan. Then, add semolina and roast on low heat till it gets aromatic and slightly golden. Keep it aside.
Next, we will prepare the sweet base. In a separate pan, boil the water and add the sugar. Keep stirring the mixture until the sugar dissolves completely. Now add James Pineapple Essence. Then add some chopped pineapple or cherries to your sweet base.
Now, we will add the sweet mixture to the roasted sooji while stirring constantly to avoid any lumps. We will have to keep cooking it on low flame till it thickens.
After that in a small pan, fry cashews and raisins in the remaining ghee and add it to the halwa.
Your halwa is ready to serve! Garnish with some fresh fruit slices and some crunchy dry fruits on top!
