Banana Cupcakes: A Classic treat with James's flavorful Banana Essence.

These banana cupcakes combine the sweetness of ripe bananas with the irresistible aroma of James Banana Essence to create a batch of moist, fluffy, and flavorful treats. Perfect for a snack, dessert, or party, these cupcakes are easy to make and even easier to enjoy!


Ingredients:


For the cupcakes:

  • 1/2 cup unsalted butter, softened

  • 3/4 cup powdered sugar

  • 3 ripe bananas, mashed

  • 1 tsp James Banana Essence

  • 1/4 cup (60 ml) milk

  • 1 1/2 cup all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt


For the frosting:

  • 1/2 cup unsalted butter, softened

  • 2 cups powdered sugar, sifted

  • 1 tsp James Banana Essence

  • 2 tbsp heavy cream or milk

Instructions:


1. Preheat Oven and Prepare Tin: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

2. Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.

3. Add Eggs and Bananas: Mix in the eggs one at a time, ensuring each is well incorporated. Stir in the mashed bananas, milk, and James Banana Essence until smooth.

4. Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture, stirring just until combined. Avoid overmixing.

5. Fill the Liners: Spoon the batter into the prepared cupcake liners, filling each about 3/4 full.

6. Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Remove from the oven and let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

7. Make the Frosting: Beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth. Stir in James Banana Essence and heavy cream or milk, beating until the frosting is fluffy and spreadable.

8. Decorate: Once the cupcakes are completely cool, frost them using a piping bag or a spatula. Add your favourite toppings like banana slices, chocolate chips, or sprinkles for an extra touch.
